Sushi Akira is a hidden omakase sushi restaurant in Shinsaibashi's backstreets, with just seven counter seats and a young chef who trained in both sushi and yakiniku kitchens. The concept is "more relaxed, more free," aiming to make serious sushi approachable for first-time visitors. The rice uses an original vinegar blended with black sugar (kokuto) for a mellow, deep flavour. The omakase courses feature seafood sourced from Osaka's markets, with aged and rested fish prepared using techniques matched to each ingredient. The menu goes beyond standard nigiri, incorporating French- and regional-Japanese-inspired creative dishes. A4-grade Miyazaki wagyu is also incorporated into select courses. Courses run from 12,500 yen to 18,800 yen. Opened in June 2025, this intimate counter has quickly built a following for its combination of technical sushi craft and creative, unbuttoned hospitality. The chef's personable approach and the small seat count make each visit feel personal, suited to dates, small celebrations and sushi enthusiasts wanting something beyond the strictly traditional.
